Day 1 - Prep, prep and more prep....

Day 1:

Breakfast
Lunch
Dinner
Sweet potato hash, 2 fried eggs & coffee
@ Chilis – Santa Fe chicken salad, no tortilla strips or dressing, side of guac
Zuchini noodles w/ghee, polish sausage, carrot, bacon and nuts

Snack:
Monkey Salad- banana,
Cashews, coconut shred and coconut oil


Thoughts: 
I did a lot of prep today.  I was feeling really good this morning, I baked chicken, cut up veggies for raw snacks and for cooking later, cooked bacon and beets, shredded sweet potatoes and white potatoes for hash and boiled some eggs.

I was a bit disappointed with dinner, after all the prep, I didn’t have a clear dinner plan and kind of threw things together.  I do have a full week plan of meals now, hopefully the week will go smoother and be delicious.

I was hungry after lunch so I had a snack of monkey salad mid-day, which still left me a bit hungry.  I’m also a bit hungry still after dinner, I will need to start eating more.


Tristan was not impressed with dinner at all.  I’ll have to try to make more kid friendly meals.
