Day 2- Salads for lunch every day? Nope.

Day 2:

Breakfast
Lunch
Dinner
Sweet potato hash w/ onions and peppers, 2 fried eggs & coffee
Salad w/chicken, avocado, roasted beets, broccoli slaw, peppers, cucumber, HB eggs
Roast pork chop w/ strawberries, Brussels sprouts, Cauli, asparagus and Broccoli







Thoughts:  Breakfast was good – glad I added the peppers and onions to switch it up a bit this morning.

Lunch was a little disappointing, with all the stuff I put in there the salad was good, but not amazing as I hoped, the chicken I roasted yesterday didn’t taste too great today, so I mostly avoided it and ate the rest of the salad.  I was still hungry after lunch so I had a late afternoon snack of monkey salad again.  It helped but I still felt hungry.  I’m hoping my body catches up soon and realizes the carbs are gone so it can start feeling full without them!


Dinner I over cooked the pork chop a bit, but adding the strawberries was a great touch.  Tristan did a pretty good job with this one, wouldn’t eat the cauliflower, but tried everything else!  I also gave him some nuts to add some more protein and calories to his.
