Day 5 - Mixed-Bag

Day 5:

Breakfast
Lunch
Dinner
Left-over frittata, guac and 2 pieces of bacon
Left over chili, monkey salad (no smoothie – pic from last night)
Coconute chicken nuggets, Sweet potato & reg fries, cauli ‘rice’ w/coconut aminos


Thoughts: 
Today wasn’t my best day for food.

The Fritata got cold again, as I ate it, even though I sat down to eat it.  It was still ok, but I kinda had to force myself to eat it.  This is why I don’t do leftovers really.

Lunch was good, left over chili, It was delicious and I ate it all.

Dinner was disappointing.  I had a great time making the coconut chicken nuggets with Tristan but they didn’t come out as good as I hoped.  They were really coconutty, and I think I was having some mistaken identity going on, I saw the nugget and expected it to taste like all other chicken nuggets, and then it didn’t resulting in my mouth not being pleased.  I only had a few, I saved the rest but I have no clue what I’m going to do with them.  The ‘rice’ wasn’t cooked all the way, and Tristan wouldn’t try it.  The fries were good, but how do you go wrong with fries?


Tomorrow is another day.  I still feel really good, no lows or highs really, but I feel fine and don’t really have any cravings.  I might be getting a little sick of sweet potato…..

Day 4 - Cravings? Nope!

Day 4:

Breakfast

Left over frittata, fresh guac
Soup w/veg broth, carrots, cauliflower, broccoli, polish sausage
Paleo ‘Chili’ – grass fed beef, onions, carrots, tomato with a berry smoothie


Thoughts:
Breakfast was crazy time.  So much was going on, I ate in stages and only ended up eating ½ of the Fritata and ½ the guac, but I was full.  I didn’t like that the frittata got cold but I ate it anyways.

Lunch was left overs from yesterday, wasn’t really looking forward to it, but it was still yummy in my lunch crock pot and it filled me up.

Dinner was delicious, although it tasted more like meaty tomato sauce than chili, must need more spices next time.

Worked out for about 30 minutes tonight, felt good.  Had a Chocolate coconut larabar before working out – not really a fan.  It just didn’t taste like much at all.  I have a few other larabars that I will probably try, but I won’t buy the chocolate one again.


I’m proud of myself how easy it is to resist non-whole-30 foods.  I had to get cornbread for Tristan to convince him to eat the Chilli, and I didn’t even want a nibble!

Day 3 - Discovering new meal ideas

Day 3:

Sweet potato ‘toast’, 2 fried eggs, guac and coffee
Soup w/veg broth, carrots, cauliflower, broccoli, polish sausage
Spanish ‘fritata’ (Potatoes, onions, eggs, kale, peppers) & pork chop roasted





Thoughts:  I was very hungry about 1-2 hours after breakfast – which is weird because it was a great breakfast.  I was also dreading breakfast this morning, laying in bed dreading more eggs, but I actually was happily surprised at how delicious it was!

I was also happily surprised at how delicious my thrown together ‘soup’ was, leftover pork sausage, pre-cut veggies – covered with veg broth and ‘cooked’ in my lunch crock pot for a few hours.  YUM!

Dinner was also delicious.  The fritatta/tortilla didn’t look as pretty as the picture online, but it was so yummy!!!


If nothing else, this challenge is helping me discover new meals to cook, new delicious meals!

Day 2- Salads for lunch every day? Nope.

Day 2:

Sweet potato hash w/ onions and peppers, 2 fried eggs & coffee
Salad w/chicken, avocado, roasted beets, broccoli slaw, peppers, cucumber, HB eggs
Roast pork chop w/ strawberries, Brussels sprouts, Cauli, asparagus and Broccoli







Thoughts:  Breakfast was good – glad I added the peppers and onions to switch it up a bit this morning.

Lunch was a little disappointing, with all the stuff I put in there the salad was good, but not amazing as I hoped, the chicken I roasted yesterday didn’t taste too great today, so I mostly avoided it and ate the rest of the salad.  I was still hungry after lunch so I had a late afternoon snack of monkey salad again.  It helped but I still felt hungry.  I’m hoping my body catches up soon and realizes the carbs are gone so it can start feeling full without them!


Dinner I over cooked the pork chop a bit, but adding the strawberries was a great touch.  Tristan did a pretty good job with this one, wouldn’t eat the cauliflower, but tried everything else!  I also gave him some nuts to add some more protein and calories to his. 

Day 1 - Prep, prep and more prep....

Thoughts: 
I did a lot of prep today.  I was feeling really good this morning, I baked chicken, cut up veggies for raw snacks and for cooking later, cooked bacon and beets, shredded sweet potatoes and white potatoes for hash and boiled some eggs.

I was a bit disappointed with dinner, after all the prep, I didn’t have a clear dinner plan and kind of threw things together.  I do have a full week plan of meals now, hopefully the week will go smoother and be delicious.

I was hungry after lunch so I had a snack of monkey salad mid-day, which still left me a bit hungry.  I’m also a bit hungry still after dinner, I will need to start eating more.


Tristan was not impressed with dinner at all.  I’ll have to try to make more kid friendly meals.

Show me the Cave

Anyone seen a nice cave around?

I've adopted this 'extreme' paleo-lithic diet, called the Whole 30, and I think one of the requirements (which are quite extreme) is to move into a cave, to get the authentic 'cave-man' experience.

So if anyone knows of a good cave, please let me know.

Why the Whole 30?  If you want to know the nitty gritty - read the book -'It Starts with Food'

A few times last year I decided to 'do' a Whole 30, I typically made it about 5 days, and now realize I wasn't doing it right at all.  You need to read the book - it all makes so much more sense after you read the book.

Also check out the website whole30.com - there is a lot of good information there, but there is no substitute for reading the book.  Go ahead, read it, I can wait.

Having read the book you already know this but this diet consists of:

YES: Meat, veggies, fruit, nuts and 'healthy' fats.

That means NO: Dairy, Grains (including Quinoa and Corn), Legumes (including peanuts, yes they are legumes), Sugar (including any sweeteners, natural or artificial) or Soy 
Also no making 'treats' with approved ingredients (meaning no paleo pancakes, or muffins, or ice-cream)

Good, now you know why I am doing this.

Its a challenge, and I need something I can complete.

Its going to heal my body.  Its funny to think your body is broken even when it doesn't feel broken, until you start eliminating foods and you realize maybe it actually is broken.

This journey actually started for me back in October of 2014, when I gave up sugar.

Sugar is a huge no-no in Whole 30, but my progress to almost eliminate it from my diet starting back in October, made this part a breeze for me!

Now doing my Whole 30, I actually eat no sugar, added sugar, sweetners of any kind.  Before I was just cutting out obvious sugar (donuts, sweeters for drinks, sweets, candy, etc.)  I ate NO candy on Halloween - I was very proud of myself.

I was very surprised by my own dedication, and ability to 'just say no' when offered sweets at work, or elsewhere.  I did make exceptions for Christmas and a few other occasions, but I was impressed with my own willpower to stick to my guns.

If it weren't for that journey, I don't think I would have even considered this Whole 30.

But please let me know if you find a good cave - I really want to do this right.....
